My friend Courtney is a domestic goddess and made this pound cake last Sunday night.

I am picky about pound cake - the taste and the texture have to be perfect for me. And this one is great! And if you love almond extract you'll really love this recipe. You can really taste the almond flavor. (If you don't like the taste of almond extract, or the smell, leave it out. No problemo.)
So here's the recipe for this crusty poundcake goodness.
1.5 cups butter, softened
3 cups sugar
1 Tbsp vanilla extract
1 tsp almond extract
3 cups flour
1/2 tsp salt
Cream butter in large mixing bowl. Add sugar gradually, mixing until the texture is fine. Add eggs, one at a time, beating after each addition. Add flavorings. Add flour and salt. Beat until flour is just moistened. Pour into a greased and floured 10-inch tube pan. Bake at 325 for 1 hour and 25 minutes or until toothpick comes out clean. Cool in pan for 15 minutes then turn out onto a wire rack.
Take your cholesterol pill. And your insulin shot.
Then get you a slice of cake, and load it up with some vanilla ice cream, strawberries, chocolate syrup, and whatever else you want, because hey, you just took your meds, and you'll be fine.
