I made this one up, folks, after making my mom's cucumber spread. And it's a pretty decent little appetizer! I'm not a fan of tomatoes on their own, but I can eat them on a BLT or hamburger most of the time. These are pretty easy and perfect for summertime! First you'll need to make a batch of the cucumber spread, which is wonderful on its own or with wheat thins or on a sandwich!
4-6 cucumbers, peeled and then grated (don't use seeds)*
1 8oz cream cheese, softened
1/3 cup mayo
Lawry's seasoning salt to taste
1 tsp onion powder
Peel and grate cucumbers, then put them in a few paper towels and make sure to squeeze all the water out. Otherwise it'll be super watery. Then mix all ingredients, and add seasonings to taste. Set aside.
*I like mine more cucumber-y than creamy, so at first I used only 4 cucumbers but then added 2 more! Just do it the way you like it.
1 box Melba Toast (I bought the kind with sea salt)
4 roma tomatoes, thinly sliced
salt and pepper
Real bacon pieces, chopped (I buy the bag/jar of cooked chopped bacon pieces.) NOT BACOS, people! :)
Stack it up!
I layered a piece of toast with the cucumber spread, then a tomato topped with kosher salt and pepper, then another smaller dab of cucumber spread, then put the bacon pieces on top! (The picture above was taken before the bacon was added!) Yummy!
